Steps

  1. Cut the chicken thighs into large pieces. Season with salt, pepper, sugar, and MSG, then marinate for about 3 hours.
  2. Finely chop the lemongrass stalks.
  3. Cut the onions into coarse chunks. Briefly sauté them in a pan, then set aside.
  4. In the same pan, brown the marinated chicken pieces.
  5. Add the chopped lemongrass and chili peppers (if using). Sauté briefly.
  6. Add the pre-sautéed onions back to the pan.
  7. Add the turmeric powder and mix everything well.
  8. Continue cooking until the chicken is thoroughly cooked and has absorbed the flavors.
  9. Serve hot, preferably with rice.
