Yellow Chicken

- 4 chicken thighs, cut into large pieces
- 1.5 tsp turmeric powder
- 2 stalks lemongrass, finely chopped
- 2 large onions, cut into chunks
- Chili peppers (optional)

- Pepper
- Sugar
- MSG
- Fish Sauce
Steps
- Cut the chicken thighs into large pieces. Season with salt, pepper, sugar, and MSG, then marinate for about 3 hours.
- Finely chop the lemongrass stalks.
- Cut the onions into coarse chunks. Briefly sauté them in a pan, then set aside.
- In the same pan, brown the marinated chicken pieces.
- Add the chopped lemongrass and chili peppers (if using). Sauté briefly.
- Add the pre-sautéed onions back to the pan.
- Add the turmeric powder and mix everything well.
- Continue cooking until the chicken is thoroughly cooked and has absorbed the flavors.
- Serve hot, preferably with rice.
Notes
- The turmeric gives this dish its distinctive yellow color, which is how it gets its name.
- This dish is best enjoyed with plain steamed rice to complement its flavors.
- Adjust the amount of chili peppers according to your preferred spice level.
