  1. Soak the glass noodles in warm water until soft (about 10 minutes), then drain and roughly chop.
  2. Soak the wood ear mushrooms in warm water until soft (about 15 minutes), then drain and thinly slice.
  3. In a large bowl, beat the eggs until well mixed.
  4. Add the softened glass noodles, sliced wood ear mushrooms, minced pork, fish sauce, chopped green onions, salt, and pepper to the beaten eggs. Mix well to combine all ingredients.
  5. Heat a little oil in a frying pan over medium heat.
  6. Pour the egg mixture into the pan and spread it evenly.
  7. Cook for about 4-5 minutes until the bottom is set and golden brown.
  8. Flip the omelet carefully and cook the other side for another 4-5 minutes until fully cooked through.
  9. Serve hot with steamed white rice.
