Tteokbokki
Tteokbokki is one of the most popular Korean street foods. This dish is made using Korean rice cakes, fish cakes, soup stock (usually dashi), and gochujang (Korean chili paste). Ingredients
- 350g to 400g Korean rice cakes (tteok)
- 150g eomuk (Korean fish cakes), sliced
- 2 1/2 cups (600 ml) Korean soup stock (dashi)
- 3 Tbsp gochujang (Korean chili paste)
- 1 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp sugar
- 1 Tbsp soy sauce
- 2 finely minced garlic cloves
- 1/2 onion, sliced
- 2 green onions, chopped
- Optional: boiled eggs, sesame seeds
Steps
- Soak rice cakes in warm water if they're hard or refrigerated.
- In a large pan, combine soup stock, gochujang, gochugaru, sugar, soy sauce, and garlic. Stir well and bring to a gentle boil over medium heat.
- Add rice cakes and simmer for 3–5 minutes until they soften, stirring occasionally.
- Add sliced onions and fish cake. Continue cooking for about 5–7 minutes, the sauce will thicken and rice cakes will become chewy.
- Stir in green onions just before serving. Garnish with boiled eggs and sesame seeds if desired.
