Guacamole

Ingredients
- 1 small yellow onion, roughly chopped
- 1 serrano chili, roughly chopped
- 1 clove garlic
- 1/2 cup (120 ml) picked cilantro leaves, finely chopped (divided in two)
- 2 teaspoons kosher salt
- 1 teaspoon cumin
- 4 ripe avocados
- 2 tablespoons juice from 2 limes
Steps
- Place onion, chili, half the cilantro leaves, garlic, and salt into a mortar and pestle. Pound into a fine paste. (Alternatively, use a food processor or blender to process these into a smooth paste.)
- Cut each avocado in half, discard pits, and spoon out the flesh into a medium bowl.
- Roughly mash the avocado with a stiff whisk or fork so some chunks remain.
- Add the onion/chili paste, remaining cilantro, cumin, and lime juice. Fold everything together to combine.
- Taste and adjust salt and lime juice as needed.
- Serve immediately with warm tortilla chips.
