Ingredients
For the Dipping Sauce:
- 1 1/2 cups (355ml) dashi
- 1/2 cup (118ml) light soy sauce
- 1/2 cup (118ml) mirin
- 1/4 teaspoon sugar
For the Noodles:
- 225 g dried soba noodles
- 1 large sheet nori, cut into thin strips
- 2 trimmed and finely chopped green onions
- 85 g peeled and finely grated daikon
- 1 teaspoon wasabi (or to taste)
Steps
- Prepare the dipping sauce by combining dashi, light soy sauce, mirin, and sugar in a small pan, bringing to a boil, then simmering for a few minutes until flavors meld. Let cool and then refrigerate.
- Cook the soba noodles according to package directions (usually 4–5 minutes). Drain and rinse under cold running water to stop the cooking and remove excess starch.
- Portion the cold soba noodles onto serving plates or bamboo mats (zaru).
- Top with shredded nori. Prepare small dishes with grated daikon, green onions, and wasabi for individual customization.
- Serve each portion with a bowl of chilled dipping sauce. Garnish as desired and dip noodles before eating.
